Ingredients
- Lamb shoulder - 400 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Honey - 2 tablespoons
- Almonds - 50 grams, blanched and toasted
- Salt - to taste
- Black pepper - to taste
- Water - 500 milliliters
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the lamb chunks, seasoning with salt and black pepper. Brown the lamb on all sides, about 5-7 minutes.
- Add the ground cinnamon, ginger, coriander, cumin, and turmeric to the pot. Stir well to coat the meat with the spices.
- Pour in the water and bring to a boil. Reduce heat to low, cover, and let simmer for about 60 minutes, or until the lamb is tender.
- Once the lamb is tender, stir in the honey and adjust seasoning if necessary. Let simmer uncovered for an additional 10-15 minutes to allow the sauce to thicken.
- While the sauce is thickening, toast the blanched almonds in a dry skillet over medium heat until golden brown, about 3-5 minutes.
- Serve the Mrouzia garnished with the toasted almonds and fresh cilantro.
