Ingredients

  • Lamb shoulder - 400 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Honey - 2 tablespoons
  • Almonds - 50 grams, blanched and toasted
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 milliliters
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the lamb chunks, seasoning with salt and black pepper. Brown the lamb on all sides, about 5-7 minutes.
  4. Add the ground cinnamon, ginger, coriander, cumin, and turmeric to the pot. Stir well to coat the meat with the spices.
  5. Pour in the water and bring to a boil. Reduce heat to low, cover, and let simmer for about 60 minutes, or until the lamb is tender.
  6. Once the lamb is tender, stir in the honey and adjust seasoning if necessary. Let simmer uncovered for an additional 10-15 minutes to allow the sauce to thicken.
  7. While the sauce is thickening, toast the blanched almonds in a dry skillet over medium heat until golden brown, about 3-5 minutes.
  8. Serve the Mrouzia garnished with the toasted almonds and fresh cilantro.
