Ingredients

  • Carrots - 2 medium, sliced
  • Zucchini - 1 medium, diced
  • Eggplant - 1 small, diced
  • Chickpeas - 200 grams, cooked
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ras el Hanout - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Honey - 1 tablespoon
  • Almonds - 50 grams, toasted and chopped
  • Cilantro - a handful, chopped
  • Couscous - 150 grams, for serving

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the sliced carrots, diced zucchini, and eggplant to the skillet. Sauté for 10 minutes until the vegetables begin to soften.
  4. Sprinkle in the Ras el Hanout, cinnamon, ground ginger, salt, and black pepper. Stir well to coat the vegetables with the spices.
  5. Add the cooked chickpeas and honey to the skillet. Mix everything together and cook for an additional 10 minutes, allowing the flavors to meld.
  6. Meanwhile, prepare the couscous according to package instructions.
  7. Once the vegetables are tender and well-seasoned, remove from heat and stir in the chopped cilantro and toasted almonds.
  8. Serve the vegetable mixture over a bed of fluffy couscous.
