- Eggplant - 1 small, diced
- Chickpeas - 200 grams, cooked
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ras el Hanout - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Honey - 1 tablespoon
- Almonds - 50 grams, toasted and chopped
- Cilantro - a handful, chopped
- Couscous - 150 grams, for serving
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrots, diced zucchini, and eggplant to the skillet. Sauté for 10 minutes until the vegetables begin to soften.
- Sprinkle in the Ras el Hanout, cinnamon, ground ginger, salt, and black pepper. Stir well to coat the vegetables with the spices.
- Add the cooked chickpeas and honey to the skillet. Mix everything together and cook for an additional 10 minutes, allowing the flavors to meld.
- Meanwhile, prepare the couscous according to package instructions.
- Once the vegetables are tender and well-seasoned, remove from heat and stir in the chopped cilantro and toasted almonds.
- Serve the vegetable mixture over a bed of fluffy couscous.
