  • Raisins - 50 grams
  • Almonds - 30 grams, blanched and chopped
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced carrot, zucchini, and red bell pepper, cooking for another 5 minutes until the vegetables soften.
  4. Add the cooked chickpeas, raisins, chopped almonds, cinnamon, cumin, coriander, turmeric, salt, and black pepper, stirring to combine.
  5. Pour in the vegetable broth and bring the mixture to a simmer. Cover and let it cook for 10 minutes, allowing the flavors to meld.
