- Almonds - 30 grams, blanched and chopped
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 200 ml
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced carrot, zucchini, and red bell pepper, cooking for another 5 minutes until the vegetables soften.

- Pour in the vegetable broth and bring the mixture to a simmer. Cover and let it cook for 10 minutes, allowing the flavors to meld.
