  • Chickpeas - 200 grams, cooked
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ras el Hanout spice blend - 2 teaspoons
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Dried apricots - 50 grams, chopped
  • Almonds - 30 grams, slivered
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the red onion and garlic until translucent.
  3. Add the diced zucchini, carrot, and red bell pepper to the skillet and cook for about 5 minutes, stirring occasionally.
  4. Stir in the cooked chickpeas, Ras el Hanout, cinnamon, salt, and black pepper, and cook for an additional 5 minutes.
  5. Remove the skillet from heat and stir in the chopped dried apricots and slivered almonds.
  6. In a separate pot, bring the vegetable broth to a boil, then remove from heat and add the couscous. Cover and let it sit for 5 minutes.
  7. Fluff the couscous with a fork and add it to the vegetable mixture, mixing well to combine all ingredients.
  8. Transfer the mixture to a baking dish and smooth the top.
  9. Cover the dish with foil and bake in the preheated oven for 20 minutes.
  10. Remove from the oven, sprinkle with chopped parsley, and serve warm.
