- Ras el Hanout spice blend - 2 teaspoons
- Cinnamon - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Dried apricots - 50 grams, chopped
- Almonds - 30 grams, slivered
- Fresh parsley - 2 tablespoons, chopped

Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté the red onion and garlic until translucent.
- Add the diced zucchini, carrot, and red bell pepper to the skillet and cook for about 5 minutes, stirring occasionally.
- Stir in the cooked chickpeas, Ras el Hanout, cinnamon, salt, and black pepper, and cook for an additional 5 minutes.
- Remove the skillet from heat and stir in the chopped dried apricots and slivered almonds.
- In a separate pot, bring the vegetable broth to a boil, then remove from heat and add the couscous. Cover and let it sit for 5 minutes.
- Fluff the couscous with a fork and add it to the vegetable mixture, mixing well to combine all ingredients.
- Transfer the mixture to a baking dish and smooth the top.
- Cover the dish with foil and bake in the preheated oven for 20 minutes.
- Remove from the oven, sprinkle with chopped parsley, and serve warm.
