- Carrots - 100 grams, diced
- Zucchini - 100 grams, diced
- Eggplant - 100 grams, diced
- Chickpeas - 100 grams, cooked
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ras el Hanout - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Honey - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
- Lemon - 1, juiced
Steps
- In a large skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
- Add the diced carrots, zucchini, and eggplant to the skillet, stirring well to combine with the onion and garlic. Cook for about 5-7 minutes until the vegetables start to soften.
- Stir in the cooked chickpeas, ras el hanout, cinnamon, honey, salt, and black pepper. Mix well and cook for another 5 minutes.
- Add a splash of water if the mixture appears too dry, and continue to cook for an additional 5 minutes until all the vegetables are tender and the flavors meld together.
- Remove from heat and drizzle with fresh lemon juice. Garnish with chopped fresh coriander before serving.
