Ingredients
- Lamb shoulder - 300 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Ground cumin - 1 teaspoon
- Saffron threads - 1/4 teaspoon
- Honey - 2 tablespoons
- Dried apricots - 100 grams, halved
- Almonds - 50 grams, toasted and roughly chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 300 milliliters
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a tagine or a heavy pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the lamb chunks and brown them on all sides, about 5-7 minutes.
- Add the ground cinnamon, ginger, cumin, saffron, salt, and black pepper. Stir well to coat the meat with the spices.
- Pour in the water and bring to a simmer. Cover and reduce the heat to low, cooking for about 1 hour until the lamb is tender.
- After 1 hour, stir in the honey, dried apricots, and toasted almonds. Cover and cook for an additional 30 minutes, allowing the flavors to meld.
- Once cooked, remove from heat and let it sit for 10 minutes before serving.
- Garnish with fresh cilantro and serve the Mrouzia Tagine over couscous.
