- Chickpeas - 100 grams, soaked overnight and drained
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 800 ml
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the lamb cubes to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the diced carrot, celery, and tomato, cooking for another 5 minutes until slightly softened.
- Add the soaked chickpeas, cumin, cinnamon, ginger, saffron, salt, and black pepper. Mix well to coat the ingredients with the spices.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes, or until the lamb is tender and the chickpeas are cooked through.
