Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Chickpeas - 100 grams, soaked overnight and drained
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 800 ml
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the lamb cubes to the pot, browning them on all sides for about 5-7 minutes.
  3. Stir in the diced carrot, celery, and tomato, cooking for another 5 minutes until slightly softened.
  4. Add the soaked chickpeas, cumin, cinnamon, ginger, saffron, salt, and black pepper. Mix well to coat the ingredients with the spices.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes, or until the lamb is tender and the chickpeas are cooked through.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped cilantro.
