Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 milliliters
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground lamb - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Honey - 1 tablespoon
  • Chickpeas - 50 grams, cooked
  • Tomato sauce - 100 milliliters
  • Fresh cilantro - a handful, chopped
  • Feta cheese - 50 grams, crumbled
  • Lemon - 1, cut into wedges

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until the dough comes together.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 30 minutes.
  4. In a skillet over medium heat, add a little olive oil and sauté the chopped onion until translucent. Add minced garlic, ground lamb, cinnamon, cumin, paprika, and honey. Cook until the lamb is browned and fully cooked, about 8-10 minutes. Remove from heat.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and roll it out into a rectangular shape on a floured surface, about 1 cm thick.
  7. Transfer the rolled dough to a baking sheet lined with parchment paper. Spread the tomato sauce evenly over the surface of the dough.
  8. Top the sauce with the spiced lamb mixture, spreading it evenly. Scatter cooked chickpeas over the top.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  10. Remove from the oven and sprinkle with chopped cilantro and crumbled feta cheese. Serve with lemon wedges on the side.
