- Basmati rice - 150 grams
- Canned chickpeas - 200 grams, drained and rinsed
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Honey - 1 tablespoon
- Almonds - 30 grams, sliced
- Water or vegetable broth - 400 ml
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic, cinnamon stick, ground cumin, ground coriander, turmeric, salt, and black pepper. Stir for 1-2 minutes until fragrant.
- Add the drained chickpeas and honey to the saucepan, mixing well to coat them with the spices.
- Drain the soaked rice and add it to the saucepan, stirring gently to combine all ingredients.
- Pour in the water or vegetable broth and bring to a boil. Cover the saucepan with a lid, reduce heat to low, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and discard the cinnamon stick.
- Serve the Mrouzia Rice hot, garnished with sliced almonds and fresh parsley.
