- Dried apricots - 50 grams, chopped
- Almonds - 30 grams, slivered
- Fresh parsley - 2 tablespoons, chopped
- Harissa paste - 1 tablespoon
- Feta cheese - 50 grams, crumbled
- Black olives - 30 grams, sliced
Steps
- In a mixing bowl, combine chickpea flour, water, 1 tablespoon of olive oil, and salt. Whisk until smooth and let it rest for 15 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add the ground lamb to the skillet, cooking until browned. Stir in cumin, coriander, cinnamon, ginger, and chopped dried apricots, cooking for an additional 5 minutes.
- Remove from heat and mix in slivered almonds and harissa paste. Adjust seasoning with salt if needed.
- Preheat the oven to 220°C (428°F). Spread the chickpea batter onto a parchment-lined baking sheet, creating a round pizza base.
- Bake the crust for 10-12 minutes until slightly golden.
- Remove the crust from the oven and spread the lamb mixture evenly over the top. Sprinkle crumbled feta cheese, sliced black olives, and chopped parsley.
- Return to the oven and bake for another 10-15 minutes until the toppings are heated through.
- Let the pizza cool for a few minutes before slicing and serving.
