Ingredients
- Gluten-free pasta - 200 grams
- Lamb shoulder, diced - 250 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Ras el hanout spice blend - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Honey - 1 tablespoon
- Dried apricots, chopped - 50 grams
- Almonds, toasted and chopped - 30 grams
- Fresh cilantro, chopped - 2 tablespoons
- Salt - to taste
- Pepper - to taste
- Water - 500 milliliters
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced lamb to the pot. Brown the lamb on all sides, about 8-10 minutes.
- Stir in the ras el hanout, cinnamon, salt, and pepper. Cook for another 2 minutes to release the spices' aromas.
- Pour in the water and bring to a boil. Reduce heat to low, cover, and let simmer for 25 minutes until the lamb is tender.
- While the lamb is cooking, prepare the gluten-free pasta according to package instructions. Drain and set aside.
- Once the lamb is tender, stir in the honey, chopped dried apricots, and chopped almonds. Cook for an additional 5 minutes.
- In a large serving bowl, combine the cooked gluten-free pasta with the lamb mixture. Toss gently to combine.
- Garnish with fresh cilantro before serving.
