Ingredients

  • Gluten-free pasta - 200 grams
  • Lamb shoulder, diced - 250 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Ras el hanout spice blend - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Dried apricots, chopped - 50 grams
  • Almonds, toasted and chopped - 30 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Water - 500 milliliters

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced lamb to the pot. Brown the lamb on all sides, about 8-10 minutes.
  3. Stir in the ras el hanout, cinnamon, salt, and pepper. Cook for another 2 minutes to release the spices' aromas.
  4. Pour in the water and bring to a boil. Reduce heat to low, cover, and let simmer for 25 minutes until the lamb is tender.
  5. While the lamb is cooking, prepare the gluten-free pasta according to package instructions. Drain and set aside.
  6. Once the lamb is tender, stir in the honey, chopped dried apricots, and chopped almonds. Cook for an additional 5 minutes.
  7. In a large serving bowl, combine the cooked gluten-free pasta with the lamb mixture. Toss gently to combine.
  8. Garnish with fresh cilantro before serving.
