Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Almonds - 30 grams, sliced
  • Raisins - 30 grams
  • Parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Season the lamb shoulder pieces with salt and pepper, then add them to the pot, browning on all sides for about 8-10 minutes.
  4. Stir in the ground cumin, cinnamon, ground ginger, and paprika, mixing well to coat the lamb evenly with the spices.
  5. Pour in the chicken broth, bring to a simmer, cover the pot, and reduce the heat to low. Cook for about 60 minutes until the lamb is tender.
  6. During the last 10 minutes of cooking, add the sliced almonds and raisins to the pot, stirring gently to combine.
  7. Once done, garnish with chopped parsley before serving.
