- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
- Almonds - 30 grams, sliced
- Raisins - 30 grams
- Parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Season the lamb shoulder pieces with salt and pepper, then add them to the pot, browning on all sides for about 8-10 minutes.
- Stir in the ground cumin, cinnamon, ground ginger, and paprika, mixing well to coat the lamb evenly with the spices.
- Pour in the chicken broth, bring to a simmer, cover the pot, and reduce the heat to low. Cook for about 60 minutes until the lamb is tender.
- During the last 10 minutes of cooking, add the sliced almonds and raisins to the pot, stirring gently to combine.
- Once done, garnish with chopped parsley before serving.
