- Zucchini - 2 medium-sized
- Ground lamb - 250 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Almond flour - 2 tablespoons
- Fresh coriander - 2 tablespoons, chopped
Steps
- Using a spiralizer or a vegetable peeler, create fettuccine strands from the zucchini and set aside.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground lamb to the skillet. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Stir in the ground cinnamon, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes to allow the spices to bloom.
- Sprinkle the almond flour over the lamb mixture, stirring well to combine and thicken the sauce.
- Reduce the heat to low and add the zucchini fettuccine to the skillet, tossing gently to coat in the sauce. Cook for an additional 2-3 minutes until the zucchini is just tender.
- Remove from heat and garnish with chopped fresh coriander before serving.
