Ingredients

  • Zucchini - 2 medium-sized
  • Ground lamb - 250 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Almond flour - 2 tablespoons
  • Fresh coriander - 2 tablespoons, chopped

Steps

  1. Using a spiralizer or a vegetable peeler, create fettuccine strands from the zucchini and set aside.
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Increase the heat to medium-high and add the ground lamb to the skillet. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  5. Stir in the ground cinnamon, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes to allow the spices to bloom.
  6. Sprinkle the almond flour over the lamb mixture, stirring well to combine and thicken the sauce.
  7. Reduce the heat to low and add the zucchini fettuccine to the skillet, tossing gently to coat in the sauce. Cook for an additional 2-3 minutes until the zucchini is just tender.
  8. Remove from heat and garnish with chopped fresh coriander before serving.
