Ingredients

  • Lamb intestines - 200 grams
  • Ground lamb - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 30 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Water - 1/2 cup

Steps

  1. Clean the lamb intestines thoroughly under cold water and soak them in a mixture of water and vinegar for 30 minutes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion and garlic, and sauté until translucent.
  3. In a bowl, mix the ground lamb, sautéed onions and garlic, cumin, cinnamon, paprika, salt, black pepper, chopped almonds, and parsley until well combined.
  4. Stuff the lamb intestines with the mixture, ensuring they are not packed too tightly, and tie the ends securely with kitchen twine.
  5. In a large pot, heat the remaining olive oil and sear the stuffed intestines on all sides until browned.
  6. Add water to the pot, cover, and let simmer for 30 minutes, ensuring to turn the intestines occasionally.
  7. Once cooked, remove from heat and let cool slightly before slicing into bite-sized pieces.
