Ingredients

  • Lamb shoulder - 400 grams, cubed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 30 grams, toasted and chopped
  • Walnuts - 30 grams, toasted and chopped
  • Dried apricots - 30 grams, chopped
  • Dried figs - 30 grams, chopped
  • Raisins - 30 grams
  • Water - 500 milliliters
  • Fresh coriander - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.
  2. Add the minced garlic and cubed lamb to the pot. Cook until the lamb is browned on all sides, about 10 minutes.
  3. Stir in the ground cinnamon, ginger, cumin, coriander, salt, and black pepper, coating the lamb evenly with the spices.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the lamb is tender.
  5. Add the chopped dried apricots, figs, and raisins to the pot. Stir well and let it simmer for an additional 10 minutes.
  6. Once the dish is finished cooking, remove it from heat and stir in the toasted almonds and walnuts.
  7. Serve hot, garnished with fresh coriander.
