- Lamb shoulder - 400 grams, cubed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 30 grams, toasted and chopped
- Walnuts - 30 grams, toasted and chopped
- Dried apricots - 30 grams, chopped
- Dried figs - 30 grams, chopped
- Raisins - 30 grams
- Water - 500 milliliters
- Fresh coriander - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.
- Add the minced garlic and cubed lamb to the pot. Cook until the lamb is browned on all sides, about 10 minutes.
- Stir in the ground cinnamon, ginger, cumin, coriander, salt, and black pepper, coating the lamb evenly with the spices.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the lamb is tender.
- Add the chopped dried apricots, figs, and raisins to the pot. Stir well and let it simmer for an additional 10 minutes.
- Once the dish is finished cooking, remove it from heat and stir in the toasted almonds and walnuts.
- Serve hot, garnished with fresh coriander.
