Ingredients
- Lamb shoulder - 400 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1 whole
- Ground ginger - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 50 grams, blanched and chopped
- Beef or chicken broth - 300 ml
- Raisins - 30 grams (optional for sweetness)
- Fresh cilantro - 1 tablespoon, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the lamb chunks and brown them on all sides, about 8-10 minutes.
- Add the cinnamon stick, ground ginger, ground cumin, ground coriander, salt, and black pepper. Mix well to coat the meat in the spices.
- Pour in the broth and bring to a simmer. Reduce heat to low, cover, and let it cook for about 60 minutes until the lamb is tender.
- If using, add the raisins in the last 10 minutes of cooking for added sweetness.
- Once the lamb is cooked, remove the lid and increase the heat slightly to reduce the sauce for about 5-10 minutes, if desired.
- Serve the Mrouzia aux Amandes hot, garnished with chopped almonds and fresh cilantro.
