Ingredients

  • Lamb shoulder - 400 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon stick - 1 whole
  • Ground ginger - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 50 grams, blanched and chopped
  • Beef or chicken broth - 300 ml
  • Raisins - 30 grams (optional for sweetness)
  • Fresh cilantro - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the lamb chunks and brown them on all sides, about 8-10 minutes.
  4. Add the cinnamon stick, ground ginger, ground cumin, ground coriander, salt, and black pepper. Mix well to coat the meat in the spices.
  5. Pour in the broth and bring to a simmer. Reduce heat to low, cover, and let it cook for about 60 minutes until the lamb is tender.
  6. If using, add the raisins in the last 10 minutes of cooking for added sweetness.
  7. Once the lamb is cooked, remove the lid and increase the heat slightly to reduce the sauce for about 5-10 minutes, if desired.
  8. Serve the Mrouzia aux Amandes hot, garnished with chopped almonds and fresh cilantro.
