- Lamb shoulder - 400 grams
- Honey - 3 tablespoons
- Onion - 1 medium, finely chopped
- Cinnamon stick - 1
- Ground ginger - 1 teaspoon
- Ground turmeric - 1 teaspoon
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 50 grams, toasted
- Raisins - 50 grams
- Olive oil - 2 tablespoons
- Water - 500 milliliters
Steps
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the lamb shoulder to the pot and brown it on all sides.
- Stir in the cinnamon stick, ground ginger, ground turmeric, ground cumin, salt, and black pepper, mixing well to coat the meat with the spices.
- Pour in the water, bring to a boil, then reduce the heat to low and cover the pot. Simmer for 1 hour.
- After an hour, add the honey, raisins, and toasted almonds to the pot, stirring gently to combine.
- Cover and continue to simmer for another 30 minutes, or until the lamb is tender and the sauce has thickened.
- Remove the cinnamon stick before serving. Serve warm with couscous or bread.
