Ingredients

  • Lamb shoulder - 400 grams
  • Honey - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Cinnamon stick - 1
  • Ground ginger - 1 teaspoon
  • Ground turmeric - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 50 grams, toasted
  • Raisins - 50 grams
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  2. Add the lamb shoulder to the pot and brown it on all sides.
  3. Stir in the cinnamon stick, ground ginger, ground turmeric, ground cumin, salt, and black pepper, mixing well to coat the meat with the spices.
  4. Pour in the water, bring to a boil, then reduce the heat to low and cover the pot. Simmer for 1 hour.
  5. After an hour, add the honey, raisins, and toasted almonds to the pot, stirring gently to combine.
  6. Cover and continue to simmer for another 30 minutes, or until the lamb is tender and the sauce has thickened.
  7. Remove the cinnamon stick before serving. Serve warm with couscous or bread.
