Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Almonds - 30 grams, sliced
- Raisins - 30 grams
- Chicken or vegetable broth - 250 ml
- Fresh coriander - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- Stir in the lamb cubes and brown on all sides, about 8-10 minutes.
- Add cinnamon, cumin, turmeric, salt, and black pepper. Stir well to coat the lamb in the spices.
- Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and let simmer for 30 minutes.
- After 30 minutes, add the sliced almonds and raisins to the skillet. Stir to combine and simmer uncovered for another 10 minutes until the sauce thickens.
- Serve hot, garnished with fresh coriander.
