Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Almonds - 30 grams, sliced
  • Raisins - 30 grams
  • Chicken or vegetable broth - 250 ml
  • Fresh coriander - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
  3. Stir in the lamb cubes and brown on all sides, about 8-10 minutes.
  4. Add cinnamon, cumin, turmeric, salt, and black pepper. Stir well to coat the lamb in the spices.
  5. Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and let simmer for 30 minutes.
  6. After 30 minutes, add the sliced almonds and raisins to the skillet. Stir to combine and simmer uncovered for another 10 minutes until the sauce thickens.
  7. Serve hot, garnished with fresh coriander.
