- Tomato - 1 medium, chopped
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon - 1, juiced
- Water - 100 ml
Steps
- Rinse the mussels thoroughly under cold water, scrubbing the shells if necessary. Discard any mussels that are open and do not close when tapped.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until the onion is translucent, about 5 minutes.
- Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Add the chopped tomato, cilantro, parsley, paprika, cumin, salt, and black pepper to the pot. Cook for another 5 minutes, allowing the tomatoes to soften.
- Pour in the water and bring the mixture to a simmer. Add the cleaned mussels to the pot, cover, and cook for 5-7 minutes or until the mussels have opened.
- Remove the pot from heat, add the lemon juice, and give it a gentle stir to mix the flavors.
- Serve the mussels warm, garnished with extra cilantro and parsley if desired.
