- Chickpeas - 200 grams, canned or cooked
- Sweet potatoes - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Harissa paste - 1 tablespoon (optional for heat)
- Water - 100 ml
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cut the sweet potatoes into thin fries, then toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper.
- Spread the sweet potato fries on a baking sheet in a single layer and bake for 25-30 minutes, turning halfway through, until crispy.
- In a pan, heat the remaining tablespoon of olive oil over medium heat and add minced garlic, cooking for 1 minute until fragrant.
- Add the chickpeas, ground cumin, ground coriander, paprika, and harissa paste (if using) to the pan, stirring to combine.
- Pour in the water, cover, and let simmer for 10 minutes to allow the flavors to meld.
- Remove from heat, stir in lemon juice and chopped parsley, and adjust seasoning if necessary.
- Serve the spiced chickpeas alongside the crispy sweet potato fries, garnished with additional parsley if desired.
