Ingredients

  • Chickpeas - 200 grams, canned or cooked
  • Sweet potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Harissa paste - 1 tablespoon (optional for heat)
  • Water - 100 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cut the sweet potatoes into thin fries, then toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread the sweet potato fries on a baking sheet in a single layer and bake for 25-30 minutes, turning halfway through, until crispy.
  4. In a pan, heat the remaining tablespoon of olive oil over medium heat and add minced garlic, cooking for 1 minute until fragrant.
  5. Add the chickpeas, ground cumin, ground coriander, paprika, and harissa paste (if using) to the pan, stirring to combine.
  6. Pour in the water, cover, and let simmer for 10 minutes to allow the flavors to meld.
  7. Remove from heat, stir in lemon juice and chopped parsley, and adjust seasoning if necessary.
  8. Serve the spiced chickpeas alongside the crispy sweet potato fries, garnished with additional parsley if desired.
