Ingredients

  • Zucchini - 2 medium
  • Red bell pepper - 1 medium
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Cilantro - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Breadcrumbs - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
  3. Chop the scooped-out zucchini flesh and set aside.
  4. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent.
  5. Add the chopped zucchini flesh, bell pepper, cumin, paprika, salt, and black pepper, and cook for about 5 minutes until softened.
  6. Remove from heat and stir in the breadcrumbs, feta cheese, parsley, cilantro, and lemon juice until well combined.
  7. Fill each zucchini boat with the vegetable mixture, pressing it down gently.
  8. Place the stuffed zucchini in a baking dish and cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until golden brown.
  10. Serve warm, garnished with additional herbs if desired.
