- Zucchini - 2 medium
- Red bell pepper - 1 medium
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Cilantro - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Breadcrumbs - 100 grams
- Feta cheese - 50 grams, crumbled
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
- Chop the scooped-out zucchini flesh and set aside.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent.
- Add the chopped zucchini flesh, bell pepper, cumin, paprika, salt, and black pepper, and cook for about 5 minutes until softened.
- Remove from heat and stir in the breadcrumbs, feta cheese, parsley, cilantro, and lemon juice until well combined.
- Fill each zucchini boat with the vegetable mixture, pressing it down gently.
- Place the stuffed zucchini in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until golden brown.
- Serve warm, garnished with additional herbs if desired.
