Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Tomatoes - 400 grams, chopped (canned or fresh)
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  2. Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 3-4 minutes until the peppers soften.
  3. Stir in the chopped tomatoes, ground cumin, paprika, cayenne pepper, salt, and black pepper. Cook the mixture for about 10-12 minutes, stirring occasionally, until it thickens slightly.
  4. Create four small wells in the tomato mixture and carefully crack an egg into each well. Cover the skillet and let the eggs cook for about 5-7 minutes, or until the whites are set and the yolks are still runny, or to your desired doneness.
  5. Once cooked, remove the skillet from heat and sprinkle fresh cilantro and crumbled feta cheese over the top if using.
  6. Serve immediately with crusty bread or pita for dipping.
