- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Tomatoes - 400 grams, chopped (canned or fresh)
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 3-4 minutes until the peppers soften.
- Stir in the chopped tomatoes, ground cumin, paprika, cayenne pepper, salt, and black pepper. Cook the mixture for about 10-12 minutes, stirring occasionally, until it thickens slightly.
- Create four small wells in the tomato mixture and carefully crack an egg into each well. Cover the skillet and let the eggs cook for about 5-7 minutes, or until the whites are set and the yolks are still runny, or to your desired doneness.
- Once cooked, remove the skillet from heat and sprinkle fresh cilantro and crumbled feta cheese over the top if using.
- Serve immediately with crusty bread or pita for dipping.
