Ingredients

  • Large eggs - 4
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Onion - 1 small, finely chopped
  • Harissa paste - 1 teaspoon (optional)
  • Fresh baguette or Moroccan bread - 2 pieces

Steps

  1. In a medium bowl, whisk the eggs with salt, black pepper, and ground cumin until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 3-4 minutes.
  3. Add the diced tomato to the skillet and cook for an additional 2 minutes until the tomatoes are slightly softened.
  4. Pour the beaten eggs into the skillet, stirring gently to combine with the vegetables. Cook for about 3-4 minutes, stirring occasionally until the eggs are just set but still soft.
  5. Stir in the chopped cilantro and harissa paste (if using) for an extra kick. Remove from heat.
  6. Serve the scrambled eggs warm with pieces of fresh baguette or Moroccan bread for dipping.
