  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4 large
  • Avocado - 1, sliced

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and zucchini, cooking for another 5-7 minutes until the vegetables are tender.
