Ingredients

  • Semolina - 100 grams
  • Almond milk - 200 ml
  • Maple syrup - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Ground cardamom - 1/2 teaspoon
  • Chopped dates - 50 grams
  • Chopped almonds - 30 grams
  • Olive oil - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Fresh mint leaves - for garnish

Steps

  1. In a saucepan, heat the almond milk over medium heat until warm but not boiling.
  2. Stir in the semolina gradually while whisking continuously to avoid lumps.
  3. Add the maple syrup, ground cinnamon, ground cardamom, and vanilla extract, mixing well.
  4. Continue to cook on low heat, stirring often, until the mixture thickens (about 8-10 minutes).
  5. Once thickened, remove from heat and stir in the chopped dates and half of the chopped almonds.
  6. Drizzle olive oil into the mixture and stir to combine.
  7. Pour the mixture into serving bowls and let it cool slightly.
  8. Garnish with the remaining chopped almonds and fresh mint leaves before serving.
