Ingredients

  • Eggplant - 1 medium (about 250g)
  • Tomatoes - 2 medium (about 300g), diced
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Harissa (optional) - 1 teaspoon

Steps

  1. Preheat your grill or barbecue to medium heat.
  2. Cut the eggplant in half lengthwise and score the flesh in a crisscross pattern without cutting through the skin.
  3. Brush the cut sides of the eggplant with olive oil, sprinkle with salt, and place them cut-side down on the grill. Cook for about 10-15 minutes until they are tender and have nice grill marks.
  4. While the eggplant is grilling, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  5. Add the diced tomatoes, cumin, paprika, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the tomatoes have broken down and the mixture is thick.
  6. Once the eggplant is done, remove it from the grill and scoop out the flesh into the tomato mixture. Stir to combine and cook for an additional 5 minutes.
  7. Remove from heat and stir in the chopped parsley, lemon juice, and harissa (if using). Adjust seasoning to taste.
  8. Serve warm or at room temperature, garnished with additional parsley or a drizzle of olive oil.
