- Chickpeas - 200 grams (cooked and mashed)
- Almond flour - 50 grams
- Zucchini - 100 grams (grated and excess water squeezed out)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Olive oil - 2 tablespoons (for frying)
- Greek yogurt - 100 grams (for sauce)
- Lemon juice - 1 tablespoon
- Fresh mint - 1 tablespoon (chopped)
Steps
- In a large bowl, combine the mashed chickpeas, almond flour, grated zucchini, chopped red onion, minced garlic, cumin powder, coriander powder, paprika, salt, black pepper, and chopped parsley. Mix until well combined.
- Form the mixture into 2 patties and refrigerate for 15 minutes to help them firm up.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and chopped mint in a small bowl. Season with salt to taste.
- Serve the cooked patties with yogurt sauce on the side, optionally accompanied by a fresh salad or low-carb veggies.
