Ingredients

  • Zucchini - 1 medium, sliced into thick rounds
  • Red bell pepper - 1, cut into 1-inch squares
  • Yellow bell pepper - 1, cut into 1-inch squares
  • Red onion - 1 medium, cut into wedges
  • Cherry tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons

Steps

  1. In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and black pepper to create the marinade.
  2. Add the zucchini, bell peppers, red onion, and cherry tomatoes to the marinade. Toss well to coat all the vegetables evenly.
  3. Cover the bowl with plastic wrap and let the vegetables marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated vegetables onto skewers, alternating between different types of vegetables.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
  7. While the skewers are grilling, prepare the dipping sauce by mixing tahini, lemon juice, and chopped parsley in a small bowl. Add water to reach desired consistency.
  8. Once cooked, remove the skewers from the grill and serve hot with the tahini dipping sauce.
