- Zucchini - 1 medium, sliced into thick rounds
- Red bell pepper - 1, cut into 1-inch squares
- Yellow bell pepper - 1, cut into 1-inch squares
- Red onion - 1 medium, cut into wedges
- Cherry tomatoes - 200 grams
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Tahini - 2 tablespoons
Steps
- In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and black pepper to create the marinade.
- Add the zucchini, bell peppers, red onion, and cherry tomatoes to the marinade. Toss well to coat all the vegetables evenly.
- Cover the bowl with plastic wrap and let the vegetables marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated vegetables onto skewers, alternating between different types of vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
- While the skewers are grilling, prepare the dipping sauce by mixing tahini, lemon juice, and chopped parsley in a small bowl. Add water to reach desired consistency.
- Once cooked, remove the skewers from the grill and serve hot with the tahini dipping sauce.
