Ingredients

  • Couscous - 150 grams
  • Water - 300 milliliters
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Chickpeas - 100 grams, canned and drained
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, bring 300 milliliters of water to a boil. Add a pinch of salt.
  2. Once boiling, add the couscous, stir, cover, and remove from heat. Let it sit for 5 minutes.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  5. Stir in the diced carrot, zucchini, and red bell pepper. Cook for about 5-7 minutes until the vegetables are tender.
  6. Add the chickpeas, ground cumin, ground cinnamon, ground coriander, salt, and black pepper. Cook for another 3-4 minutes, stirring occasionally.
  7. Fluff the couscous with a fork and add it to the skillet with the vegetables. Stir to combine all ingredients thoroughly.
  8. Remove from heat and stir in fresh parsley and lemon juice. Adjust seasoning if needed.
