- Couscous - 150 grams
- Water - 300 milliliters
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Chickpeas - 100 grams, canned and drained
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, bring 300 milliliters of water to a boil. Add a pinch of salt.
- Once boiling, add the couscous, stir, cover, and remove from heat. Let it sit for 5 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the diced carrot, zucchini, and red bell pepper. Cook for about 5-7 minutes until the vegetables are tender.
- Add the chickpeas, ground cumin, ground cinnamon, ground coriander, salt, and black pepper. Cook for another 3-4 minutes, stirring occasionally.
- Fluff the couscous with a fork and add it to the skillet with the vegetables. Stir to combine all ingredients thoroughly.
- Remove from heat and stir in fresh parsley and lemon juice. Adjust seasoning if needed.
