- Chickpeas - 200 grams (cooked and drained)
- Quinoa - 100 grams (cooked)
- Carrot - 1 medium (grated)
- Red bell pepper - 1 (finely chopped)
- Red onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Olive oil - 2 tablespoons
- Egg - 1 (beaten)
- Rice flour - 3 tablespoons
- Lettuce leaves - 2 (for serving)
- Tomato - 1 (sliced, for serving)
- Avocado - 1 (sliced, for serving)
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, grated carrot, chopped red bell pepper, red onion, minced garlic, cumin, coriander, paprika, salt, black pepper, and chopped parsley to the bowl. Mix until well combined.
- Stir in the beaten egg and rice flour until the mixture holds together. If the mixture is too wet, add a bit more rice flour.
- Divide the mixture into two equal portions and shape them into patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- Remove the patties from the skillet and let them rest for a couple of minutes.
- Serve the burgers on a bed of lettuce with sliced tomatoes and avocado. Drizzle with the remaining olive oil if desired.
