Ingredients

  • Chickpeas - 200 grams (cooked and drained)
  • Quinoa - 100 grams (cooked)
  • Carrot - 1 medium (grated)
  • Red bell pepper - 1 (finely chopped)
  • Red onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Olive oil - 2 tablespoons
  • Egg - 1 (beaten)
  • Rice flour - 3 tablespoons
  • Lettuce leaves - 2 (for serving)
  • Tomato - 1 (sliced, for serving)
  • Avocado - 1 (sliced, for serving)

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, grated carrot, chopped red bell pepper, red onion, minced garlic, cumin, coriander, paprika, salt, black pepper, and chopped parsley to the bowl. Mix until well combined.
  3. Stir in the beaten egg and rice flour until the mixture holds together. If the mixture is too wet, add a bit more rice flour.
  4. Divide the mixture into two equal portions and shape them into patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Remove the patties from the skillet and let them rest for a couple of minutes.
  7. Serve the burgers on a bed of lettuce with sliced tomatoes and avocado. Drizzle with the remaining olive oil if desired.
