- Ground ginger - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Pita bread - 2 pieces
- Mixed salad greens - 100 grams
Steps
- Press the tofu to remove excess moisture for about 15 minutes, then cut it into 1-inch cubes.
- In a mixing bowl, combine olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, ground ginger, turmeric, salt, black pepper, and lemon juice to create a marinade.
- Add the tofu cubes to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
- Preheat the grill or a grill pan over medium heat. Thread the marinated tofu onto skewers.
- Grill the tofu skewers for about 10-12 minutes, turning occasionally until they are golden brown and slightly charred.
- While the tofu is grilling, warm the pita bread on the grill for 1-2 minutes per side.
- Serve the grilled Moroccan spiced tofu with warm pita bread, a sprinkle of chopped parsley, and a side of mixed salad greens.
