  • Firm tofu - 300 grams

  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pita bread - 2 pieces
  • Mixed salad greens - 100 grams

Steps

  1. Press the tofu to remove excess moisture for about 15 minutes, then cut it into 1-inch cubes.
  2. In a mixing bowl, combine olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, ground ginger, turmeric, salt, black pepper, and lemon juice to create a marinade.
  3. Add the tofu cubes to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
  4. Preheat the grill or a grill pan over medium heat. Thread the marinated tofu onto skewers.
  5. Grill the tofu skewers for about 10-12 minutes, turning occasionally until they are golden brown and slightly charred.
  6. While the tofu is grilling, warm the pita bread on the grill for 1-2 minutes per side.
  7. Serve the grilled Moroccan spiced tofu with warm pita bread, a sprinkle of chopped parsley, and a side of mixed salad greens.
