Ingredients

  • Salmon fillets - 2 x 150g
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Almonds - 30g, sliced (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together olive oil, cumin, coriander, paprika, cinnamon, ginger, minced garlic, salt, and black pepper to create a spice paste.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the spice paste evenly over the salmon fillets.
  5. Drizzle lemon juice over the salmon.
  6. Bake in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and garnish with chopped parsley and sliced almonds before serving.
