- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Raisins - 50 grams
- Almonds - 30 grams, slivered
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the pan, stirring occasionally for about 5 minutes until slightly softened.
- Stir in the cumin, cinnamon, coriander, turmeric, salt, and black pepper, cooking for an additional minute to release the spices' aromas.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit for 5 minutes, covered, before fluffing the rice with a fork.
- Stir in the raisins and slivered almonds, mixing gently to combine.
- Serve warm, garnished with chopped parsley.
