Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Raisins - 50 grams
  • Almonds - 30 grams, slivered
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Add the diced carrot and bell pepper to the pan, stirring occasionally for about 5 minutes until slightly softened.
  4. Stir in the cumin, cinnamon, coriander, turmeric, salt, and black pepper, cooking for an additional minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit for 5 minutes, covered, before fluffing the rice with a fork.
  8. Stir in the raisins and slivered almonds, mixing gently to combine.
  9. Serve warm, garnished with chopped parsley.
