Ingredients
- Quinoa - 1 cup
- Water - 2 cups
- Chickpeas (cooked or canned) - 1 cup, drained and rinsed
- Red bell pepper - 1/2, finely chopped
- Red onion - 1/4, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, grated
- Cilantro - 1/4 cup, chopped
- Cumin - 1 tsp
- Coriander - 1 tsp
- Smoked paprika - 1 tsp
- Cinnamon - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Flour (whole wheat or all-purpose) - 1/4 cup
- Olive oil - for cooking
Steps
- Rinse the quinoa under cold water and combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
- In a large bowl, mash the chickpeas with a fork or potato masher until partially smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped red bell pepper, red onion, minced garlic, grated carrot, and chopped cilantro to the bowl with the mashed chickpeas.
- Sprinkle in the cumin, coriander, smoked paprika, cinnamon, salt, and black pepper. Mix well until all ingredients are combined.
- Gradually add the flour to the mixture, stirring until a cohesive dough forms. If the mixture is too wet, add a little more flour until it holds together.
- Divide the mixture into 4 equal portions and shape each portion into a burger patty.
- Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, add the burger patties and cook for about 4-5 minutes on each side, until golden brown and crispy.
- Serve the burgers on whole grain buns with your choice of toppings, such as lettuce, tomato, or a tahini sauce.
