- Pork tenderloin - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, zested and juiced
Steps
- In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, cinnamon, ginger, turmeric, salt, and black pepper to create a marinade.
- Cut the pork tenderloin into 2-3 cm thick medallions and add them to the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Remove the pork from the marinade and discard any leftover marinade. Grill the pork medallions for about 4-5 minutes on each side or until cooked through and internal temperature reaches 70°C.
- Once cooked, remove from the grill and let rest for 5 minutes.
- Drizzle with lemon juice and sprinkle with lemon zest and chopped parsley before serving.
