Ingredients

  • Pork tenderloin - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, zested and juiced

Steps

  1. In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, cinnamon, ginger, turmeric, salt, and black pepper to create a marinade.
  2. Cut the pork tenderloin into 2-3 cm thick medallions and add them to the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the pork from the marinade and discard any leftover marinade. Grill the pork medallions for about 4-5 minutes on each side or until cooked through and internal temperature reaches 70°C.
  5. Once cooked, remove from the grill and let rest for 5 minutes.
  6. Drizzle with lemon juice and sprinkle with lemon zest and chopped parsley before serving.
