Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Active dry yeast - 5 grams
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Red bell pepper - 1 small, diced
  • Red onion - 1 small, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - a handful, chopped
  • Tahini - 2 tablespoons (for drizzling)
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour, salt, cumin, paprika, coriander, garlic powder, and chili powder.
  3. Add the olive oil and the yeast mixture to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for about 15 minutes, or until doubled in size.
  6. Preheat your oven to 220°C (428°F) and place a baking sheet inside to heat.
  7. Once the dough has risen, divide it into two equal portions. Roll each portion into a flatbread shape, about 0.5 cm thick.
  8. Carefully remove the hot baking sheet from the oven and place the flatbreads on it. Bake for 8-10 minutes or until golden and crisp.
  9. While the flatbreads are baking, prepare the toppings by mixing the diced red bell pepper, sliced red onion, and halved cherry tomatoes in a bowl.
  10. Once the flatbreads are done, remove them from the oven and top with the fresh vegetable mixture.
  11. Drizzle with tahini and lemon juice, and garnish with chopped parsley before serving.
