Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine almond flour, egg, olive oil, water, and salt to form a dough. Knead for 2-3 minutes until smooth.
- Place the dough between two sheets of parchment paper and roll it out to a 0.5 cm thick circle. Transfer to a baking sheet.
- In a small bowl, mix cumin, coriander, paprika, cinnamon, garlic powder, and salt. Rub this spice mixture onto the fish fillets.
- Heat a skillet over medium heat and add a tablespoon of olive oil. Sear the fish for 2-3 minutes on each side until cooked through. Remove from heat and flake into pieces.
- Spread the halved cherry tomatoes and sliced red onion evenly over the dough, followed by the flaked fish.
- Drizzle with lemon juice and top with chopped cilantro and feta cheese, if using.
- Bake in the preheated oven for 15-20 minutes until the crust is golden and the vegetables are tender.
- Remove from the oven, slice, and serve warm.
