  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/2, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Feta cheese (optional, for topping) - 30 grams, crumbled

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine almond flour, egg, olive oil, water, and salt to form a dough. Knead for 2-3 minutes until smooth.
  3. Place the dough between two sheets of parchment paper and roll it out to a 0.5 cm thick circle. Transfer to a baking sheet.
  4. In a small bowl, mix cumin, coriander, paprika, cinnamon, garlic powder, and salt. Rub this spice mixture onto the fish fillets.
  5. Heat a skillet over medium heat and add a tablespoon of olive oil. Sear the fish for 2-3 minutes on each side until cooked through. Remove from heat and flake into pieces.
  6. Spread the halved cherry tomatoes and sliced red onion evenly over the dough, followed by the flaked fish.
  7. Drizzle with lemon juice and top with chopped cilantro and feta cheese, if using.
  8. Bake in the preheated oven for 15-20 minutes until the crust is golden and the vegetables are tender.
  9. Remove from the oven, slice, and serve warm.
