- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Cherry tomatoes - 150 grams, halved
- Bell pepper (red or yellow) - 1 medium, sliced
- Red onion - 1 small, sliced
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a small bowl, mix olive oil, cumin, coriander, paprika, turmeric, cinnamon, salt, black pepper, minced garlic, and lemon juice to create a marinade.
- Place the fish fillets in a baking dish and pour the marinade over them, ensuring they are evenly coated.
- Add the halved cherry tomatoes, sliced bell pepper, and red onion around the fish in the baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Garnish with chopped fresh cilantro before serving.
