- Eggs - 4 large
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Red bell pepper - 1 small, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Heat the olive oil in a medium skillet over medium heat.
- Add the chopped onion and diced red bell pepper to the skillet, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and black pepper to the skillet, stirring well to combine and toast the spices for about 1-2 minutes.
- Make four small wells in the vegetable mixture and crack an egg into each well.
- Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny, or to your desired doneness.
- Remove from heat, garnish with chopped fresh parsley and crumbled feta cheese if desired, and serve warm.
