Ingredients

  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the chopped onion and diced red bell pepper to the skillet, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and black pepper to the skillet, stirring well to combine and toast the spices for about 1-2 minutes.
  5. Make four small wells in the vegetable mixture and crack an egg into each well.
  6. Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny, or to your desired doneness.
  7. Remove from heat, garnish with chopped fresh parsley and crumbled feta cheese if desired, and serve warm.
