Ingredients

  • Eggplant - 1 medium (about 250g)

  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Greek yogurt - 100g
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your grill or barbecue to medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and place them in a large bowl.
  3. In a small bowl, mix together olive oil, cumin, coriander, paprika, cinnamon, salt, black pepper, and minced garlic to create a marinade.
  4. Pour the marinade over the sliced eggplant and toss to coat evenly. Let it marinate for about 15 minutes.
  5. While the eggplant is marinating, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and chopped parsley in a small bowl. Set aside.
  6. Place the marinated eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have grill marks.
