- Black pepper - 1/4 teaspoon
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Greek yogurt - 100g
- Lemon juice - 1 tablespoon
Steps
- Preheat your grill or barbecue to medium-high heat.
- Slice the eggplant into 1 cm thick rounds and place them in a large bowl.
- In a small bowl, mix together olive oil, cumin, coriander, paprika, cinnamon, salt, black pepper, and minced garlic to create a marinade.
- Pour the marinade over the sliced eggplant and toss to coat evenly. Let it marinate for about 15 minutes.
- While the eggplant is marinating, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and chopped parsley in a small bowl. Set aside.
- Place the marinated eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have grill marks.
