- Carrots - 400 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Raisins - 30 grams
- Toasted almonds - 30 grams, roughly chopped
Steps
- Peel the carrots and cut them into thin sticks or rounds, about 1/4 inch thick.
- In a large skillet, heat the olive oil over medium heat. Add the carrots and sauté for about 5 minutes until they start to soften.
- Add the ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper to the skillet. Stir well to coat the carrots with the spices.
- Cover the skillet and cook for an additional 10-15 minutes, stirring occasionally, until the carrots are tender but still slightly crisp.
- Remove the skillet from heat and drizzle the fresh lemon juice over the carrots. Add the raisins and stir to combine.
- Transfer the spiced carrots to a serving bowl and garnish with chopped fresh parsley and toasted almonds.
