Ingredients

  • Carrots - 400 grams

  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Raisins - 30 grams
  • Toasted almonds - 30 grams, roughly chopped

Steps

  1. Peel the carrots and cut them into thin sticks or rounds, about 1/4 inch thick.
  2. In a large skillet, heat the olive oil over medium heat. Add the carrots and sauté for about 5 minutes until they start to soften.
  3. Add the ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper to the skillet. Stir well to coat the carrots with the spices.
  4. Cover the skillet and cook for an additional 10-15 minutes, stirring occasionally, until the carrots are tender but still slightly crisp.
  5. Remove the skillet from heat and drizzle the fresh lemon juice over the carrots. Add the raisins and stir to combine.
