Ingredients

  • Bell peppers - 2 large (red or yellow)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes.
  3. In a bowl, mix olive oil, minced garlic, cumin, paprika, salt, and black pepper.
  4. Brush the mixture generously over the cut side of each bell pepper.
  5. Place the peppers cut-side down on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20 minutes, then turn the peppers over and roast for an additional 10 minutes until tender.
  7. Remove from the oven and drizzle with lemon juice and sprinkle with chopped cilantro.
  8. Serve warm as a side dish or as a main vegetarian option.
