- Bell peppers - 2 large (red or yellow)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the bell peppers in half lengthwise and remove the seeds and membranes.
- In a bowl, mix olive oil, minced garlic, cumin, paprika, salt, and black pepper.
- Brush the mixture generously over the cut side of each bell pepper.
- Place the peppers cut-side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20 minutes, then turn the peppers over and roast for an additional 10 minutes until tender.
- Remove from the oven and drizzle with lemon juice and sprinkle with chopped cilantro.
