  • Vegetable broth - 300 ml
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 small, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Raisins - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Turmeric - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced carrot and red bell pepper to the pan, cooking for another 3-4 minutes until softened.
  4. Stir in the raisins, cinnamon, cumin, turmeric, salt, and pepper, cooking for an additional minute to toast the spices.
  5. Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables and spices.
  6. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
