- Vegetable broth - 300 ml

- Garlic - 2 cloves, minced

- Raisins - 30 grams
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Turmeric - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced carrot and red bell pepper to the pan, cooking for another 3-4 minutes until softened.
- Stir in the raisins, cinnamon, cumin, turmeric, salt, and pepper, cooking for an additional minute to toast the spices.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables and spices.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
