- White vinegar - 150 ml
- Water - 100 ml
- Olive oil - 1 tablespoon
- Chili flakes - 1/2 teaspoon (optional)
Steps
- In a small pot, combine water, white vinegar, minced garlic, salt, cumin seeds, turmeric powder, coriander seeds, and chili flakes (if using).
- Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the salt, then remove from heat and let it cool slightly.
- In a clean glass jar, layer the carrots, cauliflower, bell pepper, and cucumber.
- Pour the cooled vinegar mixture over the vegetables in the jar, ensuring they are completely submerged.
- Seal the jar tightly and let it sit at room temperature for at least 2 hours before serving, or refrigerate for up to 3 days for enhanced flavor.
