- Green or brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Vegetable broth - 750 milliliters
- Tomato paste - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish, chopped
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, celery, and red bell pepper. Cook for an additional 5 minutes until the vegetables are softened.
- Add the cumin, coriander, paprika, turmeric, and cinnamon to the pot, stirring well to coat the vegetables with the spices. Cook for 1-2 minutes until fragrant.
- Add the rinsed lentils, vegetable broth, and tomato paste to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes, or until the lentils are tender.
- Season the soup with salt and black pepper to taste. Adjust the consistency with additional broth or water if desired.
- Serve hot, garnished with chopped fresh cilantro.
