Ingredients

  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Vegetable broth - 750 milliliters
  • Tomato paste - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish, chopped

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, celery, and red bell pepper. Cook for an additional 5 minutes until the vegetables are softened.
  4. Add the cumin, coriander, paprika, turmeric, and cinnamon to the pot, stirring well to coat the vegetables with the spices. Cook for 1-2 minutes until fragrant.
  5. Add the rinsed lentils, vegetable broth, and tomato paste to the pot. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes, or until the lentils are tender.
  7. Season the soup with salt and black pepper to taste. Adjust the consistency with additional broth or water if desired.
  8. Serve hot, garnished with chopped fresh cilantro.
