Ingredients

  • Green or brown lentils - 150g
  • Cherry tomatoes - 200g, halved
  • Cucumber - 100g, diced
  • Red onion - 50g, finely chopped
  • Bell pepper (red or yellow) - 100g, diced
  • Fresh parsley - 30g, chopped
  • Fresh mint - 15g, chopped
  • Olive oil - 30ml
  • Lemon juice - 30ml
  • Ground cumin - 1 tsp
  • Paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp

Steps

  1. Rinse the lentils under cold water and place them in a pot with 500ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside to cool.
  2. In a large bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, chopped parsley, and chopped mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and black pepper to create the dressing.
  4. Add the cooled lentils to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients evenly.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
