Ingredients
- Green or brown lentils - 150g
- Cherry tomatoes - 200g, halved
- Cucumber - 100g, diced
- Red onion - 50g, finely chopped
- Bell pepper (red or yellow) - 100g, diced
- Fresh parsley - 30g, chopped
- Fresh mint - 15g, chopped
- Olive oil - 30ml
- Lemon juice - 30ml
- Ground cumin - 1 tsp
- Paprika - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
Steps
- Rinse the lentils under cold water and place them in a pot with 500ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside to cool.
- In a large bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, chopped parsley, and chopped mint.
- In a small bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and black pepper to create the dressing.
- Add the cooled lentils to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
