Ingredients

  • Pizza dough - 200 grams
  • Brown lentils - 100 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Red bell pepper - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 250 ml

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a saucepan, combine the brown lentils and water, bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté for 3-4 minutes until fragrant.
  4. Stir in grated carrot, diced red bell pepper, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes, then add the cooked lentils and mix well.
  5. Roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer to a baking sheet lined with parchment paper.
  6. Spread the lentil mixture evenly over the dough.
  7. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  8. While the pizza is baking, prepare the tahini sauce by mixing tahini, lemon juice, and a bit of water until smooth.
  9. Remove the pizza from the oven, drizzle with tahini sauce, and sprinkle with fresh parsley before serving.
