- Pizza dough - 200 grams
- Brown lentils - 100 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Red bell pepper - 1 medium, diced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 250 ml
Steps
- Preheat the oven to 220°C (428°F).
- In a saucepan, combine the brown lentils and water, bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté for 3-4 minutes until fragrant.
- Stir in grated carrot, diced red bell pepper, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes, then add the cooked lentils and mix well.
- Roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer to a baking sheet lined with parchment paper.
- Spread the lentil mixture evenly over the dough.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- While the pizza is baking, prepare the tahini sauce by mixing tahini, lemon juice, and a bit of water until smooth.
- Remove the pizza from the oven, drizzle with tahini sauce, and sprinkle with fresh parsley before serving.
