Ingredients

  • Brown rice - 150 grams
  • Green or brown lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown rice and lentils under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, and bell pepper to the pan. Cook for an additional 5 minutes, stirring occasionally.
  4. Stir in the diced tomato, cumin, coriander, cinnamon, turmeric, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
  5. Add the rinsed lentils and vegetable broth to the pan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, add the rinsed brown rice to the lentil mixture. Stir well, cover, and cook for another 20 minutes until the rice and lentils are tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
