Ingredients

  • Brown lentils - 150 grams
  • Water - 500 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Whole wheat burger buns - 2
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Cucumber - 1/2, diced

Steps

  1. Rinse the brown lentils and place them in a pot with 500 milliliters of water. Bring to a boil, then reduce to a simmer and cook for 20-25 minutes until tender. Drain any excess water and set aside.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent, about 5 minutes.
  3. Stir in the grated carrot, chopped cilantro, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes until the vegetables are softened.
  4. In a large bowl, combine the cooked lentils, sautéed vegetable mixture, breadcrumbs, and the egg. Mix well until all ingredients are combined. If the mixture is too wet, add more breadcrumbs until it holds together.
  5. Form the mixture into two burger patties. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
  6. While the burgers are cooking, prepare the yogurt sauce by mixing the yogurt, lemon juice, and diced cucumber in a small bowl. Season with salt to taste.
  7. To serve, place each lentil burger on a whole wheat bun and top with the yogurt sauce.
