- All-purpose flour - 200 grams
- Warm water - 120 ml
- Instant yeast - 5 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Ground lamb - 250 grams
- Za'atar spice blend - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled
- Black olives - 30 grams, pitted and sliced
Steps
- In a mixing bowl, combine the flour, yeast, and salt. Gradually add warm water and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes or until doubled in size.
- In a skillet over medium heat, add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground lamb to the skillet, breaking it apart with a spoon, and cook until browned. Stir in the tomato paste and za'atar, cooking for another 2 minutes. Remove from heat and mix in the chopped parsley and lemon juice.
- Preheat the oven to 220°C (425°F). Roll out the dough on a floured surface into two rounds about 10 inches in diameter.
- Transfer the dough to a baking sheet lined with parchment paper. Evenly spread the lamb mixture over the dough, leaving a small border.
- Sprinkle crumbled feta cheese and sliced olives on top. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Slice and serve hot, garnished with extra parsley if desired.
