Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Instant yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Ground lamb - 250 grams
  • Za'atar spice blend - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled
  • Black olives - 30 grams, pitted and sliced

Steps

  1. In a mixing bowl, combine the flour, yeast, and salt. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes or until doubled in size.
  3. In a skillet over medium heat, add the chopped onion and minced garlic, sautéing until translucent.
  4. Add the ground lamb to the skillet, breaking it apart with a spoon, and cook until browned. Stir in the tomato paste and za'atar, cooking for another 2 minutes. Remove from heat and mix in the chopped parsley and lemon juice.
  5. Preheat the oven to 220°C (425°F). Roll out the dough on a floured surface into two rounds about 10 inches in diameter.
  6. Transfer the dough to a baking sheet lined with parchment paper. Evenly spread the lamb mixture over the dough, leaving a small border.
  7. Sprinkle crumbled feta cheese and sliced olives on top. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  8. Slice and serve hot, garnished with extra parsley if desired.
